Winter Indoor Baking Fun (#100DaysofSunshine)

During the winter months we spend a lot of time outside exploring, on the go and inside making memories by baking. Since this has been the coldest winter I can Possibly ever remember, most days have been spent in the kitchen. Some days bundling up five children to go outside to play, only for them to cry they are freezing five min later, just is not happening. So, Yesterday we decided to bake cuties gluten free cupcakes. This i also used as part of our homeschool lesson. It truly is amazing what your kids can learn just by being in the kitchen when you are cooking. Of course I had to work on a virtue of mine which was patience! 🙂 So after spilled milk, cracked eggs on the floor, it was nice to finally enjoy our cupcakes!!

Cuties Gluten Free Cupcakes

Prep time: 10 min or x2 or 3 if you have toddlers helping you!

Cook Time: 25 min

Ingredients:                                                                                                                                                             

For the cake:                                 

1 1/2 cups Ryze yellow bag flour

1 1/2 teaspoon gluten free baking powder

1/2 cup oil

2/3 organic sugar

3 large eggs, room temperature

1 teaspoon gluten-free vanilla extract

1 teaspoon Cuties juice

1 tablespoon fresh Cuties zest

1/2 cup milk of your choice

For the frosting:

1/2 cup butter (1 stick), room temperature

4 cups powdered sugar

1 teaspoon Cuties squeezed juice

4 tablespoons melted butter

Instructions:                                                                                                                                                                     1.) Preheat oven to 350 degrees F,(180c), line cupcake pan with paper liners; set     aside.

2.) In a medium bowl, whisk flour and baking powder; set aside.

3.) In a separate large bowl, combine oil and sugar.

4.) Add eggs one at a time, beating between each egg.

5.) Stir in vanilla extract, citrus juice, and Cuties zest.

6.) Add the flour mixture and dairy-free milk alternately to the wet ingredients and mix just until combined.

7.)  Divide batter among liners, filling them 2/3 full (about 1/4 cup of batter per cupcake).

8.) Bake for 20-25 min until your toothpick comes out clean.

9.) Cool completely before frosting.

10.) For frosting-beat butter until creamy. Add in Cuties juice and mix till combined. Beat in 1 cup of powdered sugar at a time, alternating with 1 tablespoon of milk. Add more or less milk for desired consistency.

12.) Add Cuties shaving on top and enjoy!!!

Cuties are also a amazing snack for toddlers as they are easy for them to peel, seed free and super sweet. Siena will eat the whole bag in one setting if i would let her. I also love to peel one for Isaac and put in a teether for him to chew on, which he absolutely loves!!!
